Basic Butchering Workshop
Want to learn more about the meat you eat? And where does it come from? Join us for a basic butchering workshop at Tablelands Premier Meats Butchery in Orange led by our experienced butchers
This workshop covers chemical free processing practice, a quick overview of Food Safety. Our experienced butcher will explain the basic cuts of an animal, demonstrate how an animal is broken down, knife sharpening technique and how to choose the right cut for your dish. You will have some hands-on experience to prepare and butcher a piece of meat. At the end of the workshop, you will also take home the boning knife you used and the knowledge you gained on the day.

Micro Abattoir Development - Information session
Due to the increased expressions of interest after ABC Landline broadcast on our boutique abattoir, Stephen Tamplin, proprietor of Tableland Premier Meats is going to share some general information on the processes involved to set up his own abattoir.
This afternoon information session will include presentation, tour of abattoir, and light lunch before the session.
One on one 30 minutes consultation after information session also available for those who wishes to discuss their specific needs (by appointment only).

In this workshop you will be introduced to hide preparation, salting methods and various forms of tanning, using both chemical and organic methods, to create 'chromed' and buckskin leathers. We provide all skins and tools. You will have a hands-on experience in finishing a product to take home.
Morning tea and a country lunch are provided.
Farm and Abattoir tour included.
Premium finished hides are available for purchase on the day.
Our farm fresh, chemical free meat and gluten free sausages are available for purchase on the day.
